Project Description:
Inspired by a global history of the mushroom, Wilfried Houjebek constructed this visualization of the first and last occurrences of various mushroom types, indicating that the entry of different varieties of mushrooms onto menus is still a relatively recent development. Mushroom types are labeled within the gray circles. Another visualization, not pictured here, also illustrates the types of ingredients most commonly found with mushrooms in restaurants.
